INGREDIENTS
– CORN HUSKS for tamales
– MEAT: 3.5 lb pork shoulder, ½ onion, 6 garlic cloves, 1 tbsp salt
– SALSA VERDE: 2 ¼ lb tomatillo, 8 serrano chiles, 2 jalapeño chiles, ¼ onion, 2 garlic cloves, 1 bunch cilantro, 1 ½ tsp salt or to taste
– MASA: 1 lb pork or vegetable lard, 2 ¼ lb corn masa mix for tamales, 8-9 cups pork or chicken stock, 1 ½ tbsp salt, 1 ½ tbsp baking powder
