We make peppermint candy canes just in time for Christmas 2016. Public Displays of Confections in Tallahassee, Florida produces hand made hard candy using Victorian techniques. Every Christmas we hand make about 10,000 candy canes for the season.

I just started watching this channel a few days ago, and I'm already planning to order a custom bag for my mom for Mother's Day, her favorite flavors combined with one of her favorite things in the world: the ocean.
When I was young around 1990, my family used to use candy canes like straws for lemon juice from a softened lemon. The acid would soften up openings in the cane making channels. This only worked for a few years before the manufactured canes would no longer give way to the juice. Could you perhaps provide some insight as to what changed?
