If the dough too dry, please add little water. Before folding the dough to cut into noodles, it’s great to dust generously with flour to prevent sticking.

We stay warm with a belly full of hot silky noodles, and if you love food especially handmade noodles as much as us, stick with us as we show you some of the best places to warm up and fill up in Auckland!
For our first stop it is the legendary Xi’An Restaurant. Xi’An Food Bar in central Auckland is one of our favourite places to get handmade noodles. We’ve been going there for years. There are lots of these chains around Auckland now but the best one is located on:

With our first stop out of the way we head into the mid city (more specifically Atrium on Elliot food court) for another one of our favourites. If you enjoy hand pulled noodles then Yong’s Hand Pulled Noodles is for you.

Our friend Michelle highly recommended this next spot. If you enjoy Japanese Udon then Udon Works is a must visit. This is the first store in New Zealand that specializes in udon noodles and it brings us right back to Japan immediately. Get ready for a bit of a line though, this is a popular spot. For our final place we visit a spot that we love going to especially with a group of friends. The atmosphere at GoGo Music Cafe is great as well as the food and of course, the delicious massive plate of chicken and wide handmade noodles.

Chinese Handmade Noodles (Chinese Style Cooking Recipe)
Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
You can serve this with sauces of your choice.
400g Plain Flour
150ml Warm Water
Pinch of Salt (optional)
1. Combine the flour & water in a large mixing bowl
2. Knead into a smooth and firm dough – this can take some time
3. Cover the bowl and leave the dough to rest for 2 to 3 hours
4. Dust a flat surface with flour
5. Place half the dough on the surface, press to flatten
6. Roll the dough with a rolling pin into about 2 or 3mm thick sheet
7. Dust the sheet with plenty of flour
8. Fold and roll from one side of the sheet into the middle
9. Fold and roll the other side of the sheet till both sides meet
10. Thinly cut the rolled sheet (or cut into thickness of your desire)
11. Pick up the middle where the two rolls meet and shake
12. Place aside and repeat with the other half of the dough
13. Bring 2 litres of water to boil in the large saucepan
14. Place the noodles in the boiling water and gently stir to avoid sticking
15. Turn heat to medium-low once it’s boiled again, then cook for 2 minutes
16. Drain and place into a serving bowl, add a sauce and serve

Fresh egg pasta noodles… I was always scared to make these, I though that they would be hard or you needed a pasta machine to get it right. I was wrong.
After watching chef Gianni from Sola in Hong Kong make these while I was interviewing him, I decided that it really wasn’t so hard and all I needed was a rolling pin -of which I have several.
This recipe makes about 1-1/4lbs of pasta and you can easily double it for a larger crowd.
Remember to have an extra egg handy, just in case that the dough doesn’t come together; add the yolk first, if that isn’t enough then add the white.
3 large eggs (+ another on hand if needed)
2 cups all purpose flour
2 tblsp olive oil
Place the flour on your countertop, and make a well in the centre.
Add the three eggs and olive oil to the well.
Break up eggs with your fingers and slowly mix flour into centre of well.
Bring ingredients together into a ball – if too dry add extra egg.
Once you have a ball that isn’t too sticky or too dry… (I know kind of vague, but it’ll make sense) Knead ball until dough is smooth.
If using a pasta machine – roll as per directions with machine.
If rolling and cutting by hand; cut dough into 4 pieces to make it easier to handle.
Roll out dough into rectangular-ish shape about 1/8″ thick. Flour both sides and then roll into a tube.
Using a very sharp knife cut into desired widths.
Unroll pasta, dust with flour to prevent sticking and then allow to dry for an hour before cooking.
While drying toss the pasta a bit, so it dries evenly.
Fresh pasta takes no time at all to cook; 30-40 seconds, and then move it to your pasta sauce for the last 10-15 seconds of cooking so it will soak up some flavour.
