How to Make Hand Made Burger Baps / Buns – Hunter Gatherer Cooking (HGC)

There is nothing nicer than the smell of bread… maybe a steak! Here is my take on the baps I made this weekend.

The key to this is egg wash them twice, once after they are cut and rolled then again 30 mins later when you seed them.

500g of strong white flour
1 egg
200 ml of tepid milk
100 ml of tepid water
1 tbsp of caster sugar
25g of lard or butter
7g (1 packet) of dried yeast
10g of salt

An extra egg for washing the buns
Seeds to top – chia seeds, sesame or poppy work well.

Homemade Vegan Burger ingredients:

【Ingredients (serves 2 – 3)】
300g bread flour
6g dry yeast
200ml water
15g sugar
6g salt

-soy meat-
150g firm tofu
20 – 30ml soy sauce
1 clove of garlic (or 1/2 – 1 tsp garlic powder)

-tofu mayonnaise-
200g soft tofu
2 tbs olive oil
2 mustard
1 – 2 tbsp sugar
dill weed

-mochi cheese-
200g mochi
250 – 300ml soy milk
30g cashew nuts
4g agar powder
80 – 90g potato starch
1 – 2 tsp lemon juice
1 tsp salt
1/2 mustard

Chinese Handmade Noodles (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

You can serve this with sauces of your choice.

400g Plain Flour
150ml Warm Water
Pinch of Salt (optional)

1. Combine the flour & water in a large mixing bowl
2. Knead into a smooth and firm dough – this can take some time
3. Cover the bowl and leave the dough to rest for 2 to 3 hours
4. Dust a flat surface with flour
5. Place half the dough on the surface, press to flatten
6. Roll the dough with a rolling pin into about 2 or 3mm thick sheet
7. Dust the sheet with plenty of flour
8. Fold and roll from one side of the sheet into the middle
9. Fold and roll the other side of the sheet till both sides meet
10. Thinly cut the rolled sheet (or cut into thickness of your desire)
11. Pick up the middle where the two rolls meet and shake
12. Place aside and repeat with the other half of the dough
13. Bring 2 litres of water to boil in the large saucepan
14. Place the noodles in the boiling water and gently stir to avoid sticking
15. Turn heat to medium-low once it’s boiled again, then cook for 2 minutes
16. Drain and place into a serving bowl, add a sauce and serve
